Pork Tenderloin

This past Friday, my parents asked me to cook dinner for them. I decided to make an asian inspired pork tenderloin with sweet potato. What made this meal absolutely amazing was the fact that I had to add zero salt to the marinade. I used olive oil, soy sauce, freshly squeezed orange juice and zest, mint, basil, cilantro, rice wine vinegar, ginger and… I think that’s it. It sounds like a lot but it was so perfect. All the flavors and juices made the the dish super delicious!

Ricotta Dip

This past Sunday, we had some family over. We had a table filled with yummy foods this dip being one of them. I first toasted ciabatta bread with olive oil and orange zest. As for the ricotta, I added salt pepper and fresh mint. I then toasted pine nuts and added honey. While the nuts candied in the honey I whipped up the ricotta with all the ingredients and then added the honey pine nut. This luscious Ricotta dip was absolutely delicious!

Beer Candied Bacon

I first heard about beer candied bacon when my boyfriend called me from Puerto Rico. He had gone to a bar with his friends and they all couldn’t get enough of it! I was pretty jealous so I looked up recipes. Making candied bacon is simple but time consuming. I made a syrup using brown sugar and beer (I used an IPA). As you cook the bacon, you want to layer the syrup until the bacon is to your liking. I personally LOVE crispy bacon which is why mine may look a bit burnt.

Gluten Free Chicken Nuggets

It’s been awhile since I’ve had chicken nuggets. I found this delicious recipe which called for interesting ingredients. The only thing I did differently was make them gluten free. The end result, bite size pieces of crispy chicken that tasted like a complete chicken parm dish. This was a fun and easy recipe!
